Slow-roasted, never machine-blasted
Each podi starts with whole lentils — toor, urad, channa, peanut, sesame — roasted in a kadai until the oils just release. Chillies are sun-dried, then dry-roasted to wake the heat. Curry leaves and garlic are added last to keep them green and aromatic.
How to use karappodulu
Idly Karam is the morning friend of any south Indian breakfast — mix into sesame oil and spread over idli or dosa. Nallakaram is the dark, bold one — works best over rice with ghee. Palli Karam is the gentle, kid-friendly entry point. Nuvvula brings sesame depth; Karivepaku brings curry-leaf warmth. Every podi has its moment.
