Authentic Nuvvula Karam
Nuvvula Karam is all about the deep, roasted perfume of sesame. We slow-roast white sesame seeds (nuvvulu) on low flame until they turn the colour of pale honey and start to crackle, then pound them with dry red chillies, garlic and rock salt. The result is a Nuvvula Karam with a rich, oily mouthfeel and a calcium-rich nuttiness that lingers long after the bite.
Sesame, the slow way
Nuvvulu need patience. Rush the roast and the seeds taste bitter; under-roast them and the podi falls flat. We do it on low flame in iron kadai, stirring continuously, until every seed is even in colour. Sesame is naturally calcium-rich, and our Nuvvula Karam captures that goodness in a form Telugu kitchens have trusted for generations.
How to enjoy Nuvvula Karam
The classic move: a fat spoonful on hot rice with a generous pour of cold-pressed sesame oil or ghee. Mix until the rice glistens. It also turns plain idli into a treat — dust a little Nuvvula Karam on top and dip in oil. Stirred into curd rice, it adds a roasted, nutty layer that lifts the whole bowl.
