Karivepaku Karam takes the humble curry leaf and gives it the spotlight it deserves. We sun-dry fresh curry leaves until they crackle, then roast them gently with urad dal, chana dal and Guntur red chillies before stone-pounding the lot into a deeply aromatic podi. The result is a Karivepaku Karam that turns a quiet bowl of rice into a meal worth sitting down for.
The curry-leaf difference
Most commercial curry-leaf podis use dried leaves that have lost their oils. We dry our leaves slowly in the shade so the essential aromatics stay locked in. When toasted, they release a green, almost citrusy fragrance that defines our Karivepaku Karam. Pounding on stone keeps the leaves visible in the podi — flecks of dark green you can see and smell.
Ways to use it
The classic pairing is hot rice with ghee or cold-pressed sesame oil. But Karivepaku Karam also lifts plain curd rice, makes a sharp dip for idli, and sprinkled over uppma it turns breakfast into something memorable. A spoonful stirred into warm dal adds an instant Andhra accent.
