Made the village way
Every batch is hand-pressed using traditional moulds and fried in fresh oil. We don't bulk-produce. A festival weekend means double batches starting at 4am. The texture you taste — that brittle, glassy crunch — comes from getting the dough hydration right, not from any additive.
