
Janthikalu
Classic chakli — pressed, golden, and gently spiced. Sun-cured the old-fashioned way, slow-tempered in cold-pressed sesame oil, and bottled by hand in our village kitchen. Best enjoyed with hot rice and a generous spoon of ghee.
Authentic Janthikalu
Janthikalu is the Andhra family of chakli — pressed coils of seasoned dough, fried to a crisp gold. Our Janthikalu starts with a blend of rice flour and roasted gram flour, kneaded with sesame seeds, cumin, ajwain and a measured pinch of chilli. Pressed through a traditional brass mould into hot cold-pressed sesame oil, each piece emerges crackling, fragrant and ready for tea.
The Janthikalu method
A great Janthikalu lives or dies on its dough. Too tight and the coil cracks; too loose and the snack drinks oil. We work hot oil into the flour mix to set the texture, rest the dough briefly, and press only as much as can be fried fresh. Sesame oil — cold-pressed, never refined — gives our Janthikalu its signature toasty backbone.
Serving and pairings
Janthikalu is built for chai and filter coffee, but it also makes a fine companion to evening drinks or a quick guest plate alongside boondi and peanut chikki. Pack them into Diwali tins, share with neighbours, send a box to family far away — they hold their crunch beautifully when stored in an airtight container.
