Ring-shaped Andhra snack with a satisfying crunch. Sun-cured the old-fashioned way, slow-tempered in cold-pressed sesame oil, and bottled by hand in our village kitchen. Best enjoyed with hot rice and a generous spoon of ghee.
Authentic Chegodilu
Chegodilu are the little crunchy rings that no Telugu festive kitchen is complete without. Each Chegodilu is hand-shaped — a soft rice-flour dough rolled into a thin rope, joined into a ring, and slipped into hot cold-pressed sesame oil to fry to a deep, even gold. The first bite snaps cleanly; the rest is warm chilli, sesame and the comfort of a recipe four generations old.
Hand-shaped, the old way
There is no shortcut to a proper Chegodilu. We mix rice flour with a touch of urad flour, hot oil, sesame seeds, ajwain and chilli powder. The dough is portioned, rolled and ringed by hand — one Chegodilu at a time. Frying in cold-pressed sesame oil gives that nutty undertone that machine-made versions never quite catch.
Pairings and serving
Chegodilu and a steel tumbler of filter coffee is the classic Andhra tea-time scene. They are a fixture in Diwali, Sankranti and wedding hampers, and they travel exceptionally well — perfect for sending to family abroad. Serve them with a tangy tomato pickle for a quick, satisfying mid-afternoon plate.
