Nuvvula Chikki is the chikki your grandmother quietly approved of — toasted white sesame seeds locked into a thin, glossy sheet of Andhra jaggery, snapping into wholesome, nutty squares. Sesame is naturally calcium-rich and jaggery carries its own iron, which is why this brittle has long been a winter and Sankranti favourite across Telugu households.
Toasted Sesame, Caught Just Right
We dry-roast white sesame seeds slowly until they turn pale gold and begin to dance on the pan, then fold them immediately into jaggery cooked to a clean hard-crack. The timing is everything: too cool and the chikki turns chewy, too hot and the sesame bitters. Four generations in Tanuku have taught the family to read the syrup the way some people read the sky.

The jaggery is sourced from Andhra and used unrefined for its mineral depth. A whisper of pure cow ghee keeps the brittle glossy and clean-breaking.
