Authentic Kaju Burfi
Kaju Burfi is restraint pretending to be indulgence — a smooth, ivory-coloured diamond that tastes purely of cashew, lightly perfumed with cardamom. There is nothing else hiding inside. No maida, no semolina, no thickeners. Just slow-ground cashews and a careful hand at the sugar, set in a tray and cut into the shape every Indian recognises.
Cashews, Sugar, And A Watchful Eye
We grind whole cashews into a fine paste and cook it with sugar syrup over a low flame until it reaches exactly the right setting point. A second too long and the burfi turns grainy; a second too short and it refuses to set. Four generations in Tanuku have taught the family how to read the spoon. The result is a piece that melts cleanly on the tongue.
Pure Ingredients, Nothing Borrowed
There is no maida bulking out our kaju burfi — only cashews, sugar, a touch of pure cow ghee, and a hint of cardamom. We don't use silver leaf, artificial colour, or preservatives. The natural sheen comes from the ghee and the kaju itself.
