Authentic Gottam Kaja

Gottam Kaja is engineering disguised as a sweet — a hollow, golden tube whose walls shatter into a hundred crisp layers the moment you bite. The name itself comes from gottam, the Telugu word for a pipe or hollow reed. Soaked just-so in light sugar syrup, it manages the rare trick of being syrupy and shatter-crisp in the same bite.

The Art Of The Hollow Layer

Making gottam kaja is a quiet test of skill: the dough is rolled, layered with ghee, rolled again, and shaped into hollow cylinders before frying. The layers separate during frying to create those signature airy walls. Done wrong, the kaja collapses. Done right — the way our family has done it for four generations in Tanuku — each piece sings when you tap it.

Light Syrup, Pure Cow Ghee

We use only pure cow ghee, never Dalda or vanaspati, which is why the layers fry up clean and stay crisp even after the syrup soak. The sugar syrup is kept to a single thread — enough to sweeten and glaze without turning the kaja soggy. No artificial colour, no preservatives, no shortcuts.
