What makes our Gongura Prawns Pickle different
Prawns sweeten as they cook; gongura sours as it reduces — get the balance wrong and you lose both. We slow-reduce sorrel into a glossy tangy base, then fold in plump prawns simmered gently in cold-pressed gingelly oil with hand-pounded Andhra chilli, garlic and ginger. The Gongura Prawns Pickle is layered so the sorrel sings on top and the prawn sweetness anchors below.
Flavour profile & experience
The first bite is bright lemon-y gongura; the second is sweet, briny prawn; the third is a slow, garlicky Andhra chilli warmth that ties the two together.
