Boti Gongura Pickle
Slow-simmered boti with sorrel leaves — rich, rustic, deeply flavourful. Sun-cured the old-fashioned way, slow-tempered in cold-pressed sesame oil, and bottled by hand in our village kitchen. Best enjoyed with hot rice and a generous spoon of ghee.
Authentic Boti Gongura Pickle
Goat boti — slow-simmered for hours until the texture turns tender and the spice gets under the skin. Folded into gongura just at the right tartness. This is the pickle for those who know.
Long-cook, slow-build
Boti needs time. A short cook gives you something chewy; a long one gives you the silken bite this pickle is built around. We cook ours for hours in sesame oil before the gongura ever meets the pot.
