Two Andhra icons in a single jar. Free-range country chicken — Natukodi — slow-cooked with sun-wilted sorrel leaves (gongura) and a deep, layered Andhra masala. The chicken brings depth; gongura brings the unmistakable sour bite.
Country chicken, not broiler
Natukodi is the village's free-range bird — leaner, denser, deeper-flavoured than broiler. It needs slow cooking to surrender, and that's exactly what we do: long simmer, low flame, gingelly oil.
How to enjoy
Best with hot rice and a generous ladle of ghee. The traditional plate: rice, Gongura Natukodi, a small chunk of raw onion, and a glass of buttermilk. That's lunch in coastal Andhra.
