What makes our Allam Pickle special
We peel and grind fresh ginger by hand, then slow-cook it with seedless tamarind pulp, jaggery and red chilli powder in cold-pressed sesame oil. The masala — mustard, fenugreek and asafoetida — is hand-pounded on a stone grinder, never machine-blitzed. This patient method coaxes out ginger's full pungency while mellowing its raw edge, giving our Allam Pickle a glossy, jam-like texture that clings to every grain of rice.
